Things You'll Need:
Casserole Dish
Mixing Bowl
Wax Paper
Greek Yogurt
Honey
Chocolate Chips
Strawberries
Candy Canes
First mix the entire container of Greek yogurt with some honey in a large bowl. You can add as much honey as you'd like - the honey is meant to make the base taste sweeter (to act as our fake chocolate). I used about a 1/4 cup of honey for the entire large yogurt container.
Next, line the casserole dish with wax paper and pour (slash spread) the yogurt and honey mix into the dish. The wax paper makes it easier to remove the peppermint bark, and gives you a surface to slice it on once it's ready. After you've poured all the contents of your yogurt and honey mixture into the dish, you can start adding toppings!
This is where you can make your peppermint bark as healthy or unhealthy as you would like. I added chocolate chips since it wouldn't be peppermint bark without some sort of chocolate, and chopped up strawberries to give it some colour. To top it off, I smashed a few candy canes in a plastic bag to make peppermint sprinkles to give the bark its peppermint flavour. Other delicious topping alternatives are raspberries instead of strawberries, dried cranberries instead of chocolate chips, and/or coconut shavings instead of candy canes. Again it's totally personal preference, and depends on how "healthy" and Christmassy you want to make your bark!
Once you're happy with your toppings, place the dish in the freezer for about 2 hours, or until the yogurt is solid enough to slice into pieces. Remove the wax paper from the dish and cut your bark into as many pieces as you would like!
This definitely tastes the best if consumed right away, but if you plan to store it and snack on it for a few days make sure to store it in the freezer!
